The Trou au Diable restaurant offers a special Indian theme menu titled APSARA on all evenings except Tuesday. APSARA is an innovative fusion of modern East Indian and Caribbean cooking, a celebration of St. Lucia historical and cultural ties with East India.

• Breakfast in the Treehouses Restaurant or Trou au Diable Beach Restaurant from 7:00 a.m. - 10:00 a.m.
• Lunch in the Trou au Diable Beach Restaurant or the Jungle Grill on Anse Mamin beach
• Afternoon Tea in the Piton and Trou au Diable Bar 3:30 - 5:30 p.m.
• Dining in the Treehouses celebrating "Tropical World Cuisine" - fine Caribbean dining - 6:30 p.m. - 9:30 p.m. daily except Tuesdays.

• Dining in the Beach Restaurant Trou au Diable celebrating “Apsara” - St Lucia - East India fusion cuisine daily except Tuesday. Also Manager’s Cocktail Party plus Grand Caribbean Grill and Cuisine Event on Tuesday evenings for all guests.

• Tropical evening with Steelband on Tuesday evening in the beach restaurant or gourmet dining with wine pairing in the Treehouse

• Emerald's all vegetarian cuisine served in the Piti Piton lounge at dinner time nightly except Tuesday. Please note that absolutely all other resort menus feature vegetarian options at all times.

Emerald

ANSE CHASTANET menus always include vegetarian options and our culinary team is also happy to meet any other dietary requirements. In addition, we serve our Emerald's dinner menu which is entirely vegetarian, showcasing the organic produce grown on our resort farm Emerald Estate in the Soufriere hills. We only use certified organic seeds. Menu selections offer new tastes and combinations: Appetizers such as Goat's Cheese Fondant, Balsamic Caramel, Apple Curry and Crispy Rain Forest Calabza Gnocchi; Entrees such as Tofu, Smoked Paprika, Sour Cream, Cilantro, Cumin and Sweet Potato and Plantain Satay. Dinner is served daily with the exception of Tuesdays.

ANSE CHASTANET is very actively involved with the island's local farmers to assist them in understanding which produce is essential to our culinary style. Together with ANSE CHASTANET'S horticultural team, we have recently been further expanding ANSE CHASTANET'S own gardens, cultivating fresh herbs and fresh fruits which are grown amidst the historical ruins of the Anse Mamin plantation, part of ANSE CHASTANET'S 600 acre estate. Fruits grown on the estate include bananas, passion fruit, tamarind, mangoes, avocados, oranges, tangerines, guavas, papayas, coconuts to name just a few.

Jade Mountain Club

Wrapped around an infinity pool with a dazzling kaleidoscope of colors, the Jade Mountain Club caters exclusively to resident guests, celebrating James Beard Award winner Chef Allen Susser’s “Jade Cuisine.” Hovering in space above the Jade Mountain Club is the Celestial Terrace, perfect for sunset cocktails or star-gazing. Jungle Grill

The Jungle Beach Bar & Grill, located on our second beach of Anse Mamin, is open from 10 am to 4:00 pm except Saturday with lunch served from noon to 3 pm. The relaxed and laid back atmosphere on this exotic soft sand beach makes the Jungle Grill a favourite with many of our resort guests.
